After you visit one of the winter farmers’ markets that are popping up around Maine, well, then what do you do with all that produce? The 20th-anniversary edition of the “Winter Harvest Cookbook” by Lane Morgan (New Society Publishers, $24.95) has plenty of ideas. The book has been revised and updated with more than 200 recipes using produce from the winter garden. Feast on a spicy squash stew with cornmeal dumplings. Then for dessert, try a carrot ginger hazelnut cake. The new version of the book includes lots more vegetarian, vegan and gluten-free dishes. There are also descriptions of produce you’re likely to find at a winter farmers market, from collards to hardy kiwi. This is a West Coast book, but it’s as handy for Maine market-goers as it is for folks in Seattle.
