Portland is finally getting serious about its Mexican food. Bone up on your tacos with a book that shows you hundreds of ways to savor them. “300 Best Taco Recipes” by Kelley Cleary Coffeen, a cookbook author and food consultant who lives in New Mexico, offers up such delectable creations as Grilled Jerk Chicken Tacos with Hot Pineapple Sauce and Fresh Baja Fish Tacos with Mexican White Sauce. The book includes lamb and turkey tacos too, along with the more standard pork, beef and chicken variations.

Coffeen shows you how to make your own corn and flour tortillas, and gives you 10 tips for perfect tacos. (Did you know the “perfect folded taco” is made with a 6-inch tortilla and 2 to 3 tablespoons of filling?) There are chapters on salsas, dessert tacos and cocktails too.

The Cactus Colada recipe, made with sweetened flaked coconut, pineapple juice, tequila lime juice and cream of coconut, made me want to go right home and fire up my blender.
