If you are a fan of “wacky cake” — that one-bowl wonder that produces a delicious chocolate cake made without dairy or eggs — you’re going to love “Piece of Cake! One Bowl, No-Fuss, From-Scratch Cakes” by Camilla V. Saulsbury (Robert Rose, $29.95). The author offers something I’ve never seen before — variations of wacky cake in vanilla, lemon, lime, coconut and, yes, even more flavors. It’s wacky cake heaven!

This book takes the whole one-bowl cake thing to a whole new level. There’s no sifting, no creaming, no stand mixers in sight. (Cake flour? What’s that?) And the choices are many, so it’s good that Saulsbury helps you narrow down what you’re looking for by dividing the recipes into categories. Traditionalists might want to try the Pineapple Upside-Down Cake, while “trendsetters” would probably prefer the Salted Caramel, Peanut and Chocolate Upside-Down Cake. For hedonists, there’s Sticky Toffee Pudding Cake and other decadent offerings, and for the health conscious there’s Whole Wheat Honey Cake with Orange Icing.

In all, there are 175 cake recipes in this book, and more than 50 recipes for icings, glazes syrups and sauces.
