America must love its cookies. Here’s another cookie cookbook, this one from the editors at Fine Cooking magazine.

“Cookies: 200 Favorite Recipes for Cookies, Brownies, Bars & More” (Taunton Press, $19.95) contains all the basics, and it’s full of classic recipes for cookies, bars, brownies, biscotti and shortbread, along with tons of tips. There are explanatory sidebars that teach techniques, such as how to produce evenly baked cookies and how to make sure your fudge turns out smooth.

But the most tempting ideas come in the last two chapters.

In “Spirited & Spiced Cookies,” you’ll find inspiration in Kahlua truffle triangles and mocha cinnamon chocolate-chip cookies. Finish with “Sweet & Savory Sandwiches,” a chapter on sandwich cookies that features a cookie based on lemon meringue pie. The “cookies” are buttons of meringue sprinkled with gingersnap crumbs. The filling is lemon curd.

If that’s too offbeat, try the orange cream stars or the peanut butter and chocolate sandwich cookies. (The photo of that one alone will make you crave a glass of milk).

This is one of those books that you pull out on a rainy day. Pour a cup of hot tea and start baking.
