Happy New Year to me!

So, I stopped by Bam Bam Bakery in Portland the other day. It has a great selection of gluten-free baked goods, but what I didn’t know was it has some vegan options as well.

I found Bam Bam’s vegan ginger snaps and vegan chocolate crinkles, but what looked really appetizing was something called a vegan breakfast bomb. It’s a ball of goodness with quinoa, rolled oats, peanut butter, cinnamon and cherries, among other things.

After one bite I was hooked. Actually that one bite was the entire bomb. I liked them so much, I even ate the one I bought for my wife while I was in the car on the way home. It was worth any consequences I would receive from my bride.

The breakfast bombs are the perfect treats for a day of watching football, checking out the Tournament of Roses Parade or even getting over your New Year’s Eve party. Make a batch and eat them all; you will not be disappointed.

If you want the lazy way out, just do what I did and head to Bam Bam Bakery on Commercial Street and buy one or two or three in person. Enjoy the breakfast bombs homemade or made in the bakery, but most important of all, enjoy that vegan thing.

VEGAN BREAKFAST BOMBS

2 cups cooked quinoa

2 cups rolled oats

3 tablespoons ground flax seed

â…” cup molasses

2 tablespoons ginger

¾ cup maple syrup

2 cups creamy peanut butter

2 teaspoons cinnamon

2 cups unsweetened coconut, plus 1 cup for finishing

¾ cup cocoa powder

¾ cup dried cherries, chopped

Mix everything together in mixer until well blended. Portion to desired size and roll in unsweetened coconut.
