BANGOR — Secretary of State Matthew Dunlap is heading to the kitchen to prepare a dish from a vintage Maine cookbook.

Dunlap will prepare fish balls on Friday at the R.M. Flagg Maine Kitchen Cooking School demonstration kitchen in Bangor. The Democrat, who was recently re-elected by the Maine Legislature, used to be the lead cook for the University of Maine and has also worked in restaurants in Bangor and Bar Harbor.

The recipe for the dish was found in one of four promotional cookbooks at the Maine State Archives. Among the cookbooks on hand at the archives are the “State of Maine’s Best Seafood Recipes” from 1945 and “99 Potato Recipes” from 1938.
