Meredith Goad’s April 20 article on the making of birch syrup forgot to mention one small caveat.
While the main sugar found in the syrup, xylitol, helps prevent tooth decay, it should not be fed to our canine friends, as it causes a dramatic release of insulin from the pancreas, resulting in profound hypoglycemia and sometimes death.
