Gluten-free foods may take time, but are worth it

Your article \"Gluten-free on the rise\" (Oct. 8) was spot-on. Since we opened our business two years ago, a substantial portion of our customers have sought gluten-free or lactose-free foods. While it takes additional time and effort for business owners to carefully monitor ingredient usage, we have found that the extra commitment is absolutely worth it.

Gluten-free and lactose-free menu items not only attract new customers, but they also build the loyalty of patrons who like to see that business owners care enough to provide a customized product experience.

We would advise every Maine food company to find ways to make their selections accessible to customers who follow strict nutritional requirements. It\'s good for customers, and it\'s good for business.
