The show of food and beverage establishments that opened in Greater Portland reached an astounding level in 2013. At last count there were some 20 new restaurants and bars that have opened this year, with more on the way.
But what impressed me was not only the new restaurants that came to us this year but the new or reliably excellent dishes that were created at these establishments old and new. Take a look at some stand-out dishes for 2013.
Back Bay Grill: salmon over puree of delicata squash
In'finiti Fermentation and Distillation: chorizo with eggs and potato crisps
Ruski's: blue cheese burger
Hugo's: peas with housemade lardo and wild flowers
Nebo Lodge (North Haven): local swordfish belly
Piccolo: housemade cavatelli with lamb ragu
Natalie's: local lamb over cous cous
Tao-Yaun: lamb pancakes
Figa: chickpeas and shrimp; this restaurant will be reopening sometime next year
The Maine Diner: chicken a la king
Empire Chinese: sizzling chicken

Long Grain: custard with black beans
Five Fifty-Five: smoked salmon in cider
