Columnist puts Primo with ‘important’ U.S. restaurants

Bon Appetit food columnist Andrew Knowlton has named Primo one of “The 20 Most Important Restaurants in America.”

Primo is owned by James Beard award-winning chef Melissa Kelly and her husband, Price Kushner. The 13-year-old Maine restaurant is known for its extensive gardens, greenhouses and raising its own animals.

Knowlton notes that Primo’s charcuterie program “rivals any in the U.S.”

“What started as a humble country restaurant has grown to be one of the country’s most sincere and exciting expressions of farm to table,” Knowlton writes in his column, “The Foodist.”

Primo is in great company. Knowlton’s other choices include Momofuku and Le Bernardin in New York, Alinea in Chicago and Cochon in New Orleans.

Knowlton describes the 20 restaurants he chose for the list as “fearless spots that drive chefs to innovate, restaurateurs to imitate, and the rest of us to line up.”
