Bon AppA?©tit, which prepares all the meals for Saint Joseph’s College in Standish, has signed an agreement with Smiling Hill Farm to sell its dairy products exclusively at the campus cafA?©.
The Smiling Hill dairy herd consists of 50 registered Holsteins, which are out in the pasture seven months of the year. The farm does not use pesticides, chemical fertilizers or artificial growth hormones.
“They take pride in their commitment to the well-being of each animal,” says Stuart Leckie, director of dining operations at Saint Joseph’s College. “They emphasize traditional dairy practices, not a high-production, high-stress operation.”
The farm, managed by the Knight Family since the 1700s, is located on 500 acres on the Westbrook-North Scarborough line. All of the milk at the campus cafA?© will be served in a glass milk bottle (with cash deposit) to encourage recycling.
National food vendor Bon AppA?©tit operates “dining hall restaurants” all over the United States and embraces a philosophy of sustainable agriculture and locally grown foods.
