Cathy Houlihan of Cape Elizabeth sent in a recipe for her mother’s coffee cake, which she now makes for her own three children. Here’s what she had to say about the cake:

“My sister and brothers and I loved waking up to the cinnamon-y smell of this cake baking, anticipating the taste even before we left our beds! It is baked in an 8” square pan, and Mom would cut it into four good-sized pieces so we would each get one piece (and you were very lucky if you got to choose the first one, preferably the biggest and the one with the most topping).

Mom’s been dead for 10 years now, but I made sure to write down the recipe a few months before she died. Now, every time I mix the batter and smell this cake baking, I remember her and the love I felt whenever she took the time to make this special treat for us.”

MOM’S COFFEE CAKE
1 beaten egg
1/2 cup sugar
1/2 cup milk
2 tablespoons melted butter
1 cup flour
2 teaspoons baking powder
Combine egg, sugar, milk and melted butter. Add flour mixed with baking powder. Mix well. Pour into greased 8″ square pan. Sprinkle with topping mix (recipe below). Bake at 375 degrees for 20-25 minutes.

Topping: 1/4 cup brown sugar; 1 teaspoon cinnamon; 1 tablespoon flour; 1 tablespoon melted butter. Mix together and sprinkle on top.
