YARMOUTH — Yarmouth’s first-ever craft brewery is set to open for business Monday, June 25.

On June 18, with just a week to go, Brickyard Hollow general manager and head brewer, Tyler “Doe” Havrilko, was busy brewing a summer saison to add to the draft list, which he said will rotate constantly.

Havrilko also made a Kolsch, a pale ale and a double India pale ale. Each batch brews five barrels.

“I want to prioritize making beer that people want to drink, but also try and do different things often,” he said. “It may be hard for me to keep up.”

The drafts, Havrilko said, won’t be named. Instead, the menu will simply read their style and ingredients, for instance, Brickyard Hollow Pale Ale with cascade hops and ale malt.

“Once we’re confident with one specific recipe, we can say ‘This is the Brickyard Hollow IPA,’ and that will be the name,” Havrilko said. As he works to perfect each recipe, Havrilko hopes to gather customer feedback, whether it’s a call for more hops or a request for a new type of beer he hasn’t tried yet.

Outside the brewhouse on Monday, friends and construction crews were busy setting up tables and preparing for customers. Once completed, the 2,100-square-foot building and outdoor patio will be equipped to seat up to 97 people.

The kitchen will offer a variety of dishes, ranging from $12-$20.

“There will be classic pub expectations with new-school flair, with some Asian and South American influences,” he said. “We wanted different genres so people can come here multiple times a week.”

The restaurant and tap room’s decor will pay homage to Yarmouth Village’s industrial history. 

The plot of land at 236 Main St., where Brickyard Hollow sits, was once a wet, muddy stretch of terrain that separated Yarmouth’s fishing industry from its inland farming community.

At the turn of the 20th century, the town decided to eliminate the swampy dividing line and fill in the hollow with black ash from a local paper mill, established nearby on the Royal River. In time, the area was populated with the local institutions that make up the heart of Yarmouth’s Main Street village.

“We want to emphasize community here as much as possible,” Havrilko said, adding the business’ name is based on “bringing two communities together by filling the valley between them.”

The Yarmouth Chamber of Commerce will host a grand opening reception and ribbon-cutting Tuesday, May 26, when Brickyard Hollow will be selling half-off beers from 4-6 p.m.

“It will hopefully encourage people from the town to come see the place and have a version of a happy hour,” Havrilko said.

Havrilko said owners Brad Moll and Frank Grondin, who live in Yarmouth, are dedicated to adding to the community. He, too, moved to Yarmouth for the job and now lives down the street from the brewery.

“Something that Yarmouth didn’t have was a craft fermentation place and this is that,” he said. “Every city and town deserves at least a brewery.”
