Portland Hunt & Alpine Club owner and bartender Andrew Volk uses a shaker while making a Jack Rose cocktail. "I always knew I enjoyed working with my hands more than sitting behind a desk," Volk said.
Volk, who is both the bartender and owner, and his staff at the Portland Hunt & Alpine Club serve standard cocktails, but also concoct originals for their menu. "Sometimes, you pick a certain flavor, or you find a name first and then make a drink from there. It's the creative process, just like anything else," Volk said.
"For me, drinking is all about mood. Sometimes, you're in a whiskey mood, or a red wine mood, or a cosmopolitan mood," said Volk, shown pouring the ingredients for a Jack Rose cocktail.
When Volk or his staff gets an idea for a new drink addition to their menu, they gather together and vet the potential new drink, treating the creation as a collaborative process.

"What I really enjoy about bar tending is giving a guest a drink that they haven't had, and opening them up to new things," Volk said.
