KENEBUNK — It was a special and welcoming change at the dining hall of assisted living facility Atria Kennebunk when resident Aldo Mencaccinmi temporarily became executive chef. Culinary director John Caron overheard a conversation between Mencaccini and his tablemates that he wished he could cook his specialty again: linguini with clam sauce. Ten pounds of pasta later, residents were watching Mencaccini take on the duties of executive chef as Caron took on the role of sous chef. “He had a permanent smile on his face, and was highly complementary,” said Caron.
