If one of your New Year’s resolutions for 2012 is learning to cook, it might be worth investing in the latest tome from Cook’s Illustrated, which contains 2,000 recipes developed in its test kitchen.

The “Cook’s Illustrated Cookbook: 2,000 Recipes from 20 Years of America’s Most Trusted Food Magazine” (America’s Test Kitchen, $40) is like a lot of their other books — written for anal-retentive cooks who wonder why this ingredient works and that one doesn’t, or follow endless notes about how many variations of a recipe the test kitchen tried and why.

But this kind of attention to detail, plus the assurance that the recipe is going to turn out fine if you just follow the instructions, will be comforting to a new cook. An added bonus is loads of helpful tips like this one: To keep beets from staining your cutting board, coat the board with a little non-stick cooking spray before chopping.
