
The B.E.A.T., a perfect combination of breakfast and lunch, has 8 ingredients — bacon, egg, avocado and tomato, plus a toasted english muffin, a little butter, and a sprinkle of salt and red pepper flakes.
You can make the egg any way you like — to cut back on the messiness factor, I made sure my yolk was fully cooked, but a runny yolk placed on top of the sandwich would also be extra scrumptious.
Two key thing to remember: make sure you use a ripe avocado so your slices are nice and soft, and make sure your bacon is nice and crispy to add an extra crunch.
The B.E.A.T.
1 piece of cooked bacon
1 egg, cooked however you like
1/4 of an avocado, sliced
1 slice of tomato
1 english muffin — toasted and buttered
Salt and red pepper flakes to taste
This one is pretty self explanatory: stack your bacon, egg, avocado and tomato on top of one half of your buttered english muffin. You can stack the ingredients any way you like, but I prefer egg first, topped with bacon, then tomato, and avocado on top. Sprinkle with salt and red pepper flakes. Top with your second english muffin half, and you have a perfect breakfast or lunch. Enjoy!
