Westbrook resident Cindy Dalfonso will speak at ecomaine’s Green Symposium, set for 9 a.m.-2 p.m. on Thursday, Nov. 13, at the University of Southern Maine, 96 Falmouth St., Portland.

Her topic will be how a restaurant can be converted to zero waste.

Dalfonso, a 1984 graduate of Westbrook High School, and Tammy Speed of Gorham own the Bistro 21 restaurant at 21 County Road in Westbrook. The workshop is entitled “What You Can Do: Practical Steps that Make a Difference” and is one of six at the symposium.

Dalfonso and Speed made the conversion to a zero-waste operation overnight and found it was easy to do and financially advantageous. Bistro 21 lowered expenses by becoming a zero-waste restaurant and though it has been a successful business from the beginning, has attracted even more customers because of their “green” efforts.
