Chef Christian Bassett finalizes an array of local food specialties.

There is real passion in the kitchen of the Brunswick Hotel & Tavern. Chef Christian Bassett and his enthusiastic and knowledgeable staff regularly experiment with new raw foods, preparation and presentation techniques. At a recent luncheon for a small group, Bassett presented a variety of hors d’oeuvres and appetizers on platters rather than a plated and served meal.  Guests could graze the array or pass the platters. It was memorable and an appealing way to start conversation.

The chef plans more unusual events beginning in February. His Chef’s Table events will be ticketed and open to the public by reservation. The Annual Ice Bar on Feb. 7-9 will include live music and a delectable variety of seasonal, local foods. Wine, beer and whiskey dinners may be offered in the future.

Bassett is known for his fusion techniques and from-scratch philosophy. He sources as much as possible locally and creates menu specials to make use of seasonal products. The Brunswick Hotel & Tavern participates in the FEEDKIDS program through Full Plates Full Potential to raise money towards relieving children’s hunger.

It is exciting to find culinary innovation in the Midcoast, and it’s delightful to sample some of the offerings. Daily specials are offered, and the Friday specials are featured on Instagram.
