SACO — As the holidays approach, thoughts often turn food, especially to baked goods with which to treat guests or to have as a special addition to a family meal.

The Ladies of St. Fotini at St. Demetrios Greek Orthodox Church in Saco have been busy preparing everyone’s favorite Greek delicacies, in preparation for their 2022 Bazaar to Go.

On a recent day, they were preparing appetizers — stretching out thin layers of phyllo dough, painting the dough with melted butter, adding another layer of phyllo, more butter, and so on, and  eventually  adding one of three fillings — spinach, mushroom, or cheese — and folding the filled dough into triangles, and basting with butter yet again.

The appetizer mix is a small example of the pastries and other Greek delicacies on offer.  The online menu and ordering link was to open  Nov. 1 at https://bit.ly/3fb2IDF. For questions regarding ordering, contact Toni Spirounias (207) 934-2159 Online ordering continues through Nov. 13.

People may order savory items including: kotopita — individual chicken hand pies available in a tray of six; pastitsio — a baked pasta with meat; spanakopita — a spinach and cheese mix layered between sheets of phyllo, all are frozen and ready to bake along with the appetizer mix. Sweets include everyone’s favorite baklava, with chopped nuts layered in phyllo and covered in a honey-based syrup; karithopita, a honey cake with walnuts; ravani, a Greek semolina cake with orange syrup; braided butter cookies with sesame seeds called koulourakia; paximathia, a Greek version of biscotti with walnuts and cinnamon; a sweet bread; walnut chocolate swirl sweet bread; or pumpkin strudel.

There are two pick up day options: 10 a.m. to 2 p.m. Friday Nov. 18 or Saturday Nov. 19.

There will also be a specialty table on pick up days, offering home baked pies, cakes, cookies and more, and a craft table. Cash and checks will be accepted for those items.
