FALMOUTH — After eight months of vacancy, the former Stonyfield Cafe space in the Shops at Falmouth Village will soon have a new restaurant tenant.

Falmouth resident Sharon Starks and chef Oleg Opalnyk plan to open Bueno Loco Mexican Restaurante at 240 U.S. Route 1 in February 2013.

Starks said that it has been a dream of hers to open a restaurant and after 15 years working in the hospitality field, the dream is coming true.

“I really felt like there is no Mexican from Portland to Brunswick, so we are really looking at bringing something different and unique to the area,” she said.

Renovation of the 4,100-square-foot space began last week.

“It was a very successful restaurant for 10 years and it’s a great location and is pretty much set up to handle our theme of Mexican food,” Starks said. “It’s going to lend itself to running (a cafeteria-like) Chipotle-style at lunch and a seated dinner service,” Starks said.

In addition to a decor change, the restaurant will have a bar, new furniture and a small kitchen redesign.

“It’s not going to look like the same space once it’s done,” Opalnyk said.

Bueno Loco will serve Mexican with a Mayan twist, which Starks said is different from the traditional Tex-Mex many restaurants serve. She says it will be a “healthier Mexican,” and Opalnyk will use a lot of local ingredients.

The restaurant will serve lunch and dinner and be open Tuesdays through Thursday from 11 a.m.-9 p.m., Friday 11 a.m.-10 p.m., and 4-10 p.m. on weekends.

Stonyfield Cafe (and its predecessor, O’Naturals) was an original tenant in the Shops at Falmouth Village. The healthy-menu cafeteria-style restaurant closed last April.
