Vinland chef David Levi and two business partners are opening a new wine bar featuring natural wines at 3 Deering Ave. in Portland’s West End.

Natural wines are those grown sustainably, without pesticides. They are often certified organic.

Vinbar will serve a selection of mostly snacks and small plates, focusing on buckwheat crepes, or galettes. It will be open from 11 a.m. to 11 p.m. daily. The targeted opening date is Dec. 1.

On Thursday, Levi will welcome executive chef Andy Bennett and master sommelier Pascaline Lepeltier, both of New York’s Rouge Tomate, to Vinland at 593 Congress St. for a pop-up dinner. The restaurant’s wine program is based on natural wines, and curated by Lepeltier.

Rouge Tomate earned a Michelin star soon after it opened on the Upper East Side in 2009. It closed at the end of summer in 2014 to move to a new location in Chelsea.

The five-course dinner, with wine pairing, costs $100 per person. Tickets are required and are available through brownpapertickets.com or by calling 653-8617.

Seating will begin at 6 p.m.
