Marth is raising some 700 geese organically for the traditional "Martin Goose" dinner for the feast of St. Martin of Tours (also called "Martini") . The feast marks the time when new wines are tasted, cattle are butchered and geese are at their prime. It is celebrated in German-speaking Europe on Nov. 11 usually with a roast goose.
